Oriental Chicken Salad
(adapted from Good Things Utah 6/25/15)
Salad Ingredients
1 lb. chicken breasts, seasoned with salt and pepper and grilled; cut into bite size pieces
12 oz. broccoli slaw mix
12 oz. coleslaw mix
4 oz. snow peas or snap peas
1 red bell pepper, seeded and chopped
4 green onions, chopped
2–4 plums, pitted and sliced
1/2 cup raw, unsalted cashews, lightly toasted
Sesame Dressing
1/2 cup sesame seed oil
1/4 cup Apple Cider Vinegar
1 tbsp. honey
1 clove (1 tsp.) garlic, crushed
1/4 tsp. ground ginger
2 tbsp. soy sauce
pepper to taste
What to do
Toss together salad ingredients, except cashews, in a large bowl. Prepare dressing by adding all the ingredients in a jar, put the lid on, and shake until everything is blended or pulse in a food processor. Pour the dressing over the salad and stir to evenly coat. Cover and set in the fridge to marinade for at least 15 minutes. Toss cashews into salad just before serving.
